Tule Publishing first started out as Montana Born Books back in 2013 with our first rodeo multi-author series. It seemed only fitting that we quickly moved from fall rodeo to Christmastime in Montana – where we built the beautiful fictional town of Marietta where you will find quite a few of our Montana Born cowboys reside. From then, each year Tule has committed to bringing our readers more beautiful romances and even more stunning Christmas cowboys year-after-year. This year is no different!

Tule author Nan Reinhardt shares her Poppy and Grandboy’s Holiday Spritz Cookie recipe!

Delicious recipes straight from the kitchens of your favorite Tule authors.

Ingredients: 

1 cup butter-flavored Crisco
1/2 cup granulated sugar
1 egg
3/4 teaspoon salt
3/4 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all purpose flour

 

 

Directions:

  1. Preheat oven to 400 degrees.
  2. Cram Crisco and sugar together until fluffy. Beat in egg, salt, vanilla and almond extract.
  3. Work in flour until blended.
  4. Force dough through a cookie press in desired shapes onto ungreased baking sheet.
  5. Decorate with colored sugars.
  6. Bake a 400 degrees to 5-7 minutes until set, but not brown. Cool slightly before moving to cooling racks.

Makes about 4-5 dozen cookies.

Note: dough may also be tinted with a few drops of food coloring for some added colorful fun!

A decadent recipe from Tule author Kelly Hunter that’s meant to be indulgent and will need the extra hands of a helper.

What you’ll need:
Brandy snaps (store bought or make your own)
Double cream and/or marscapone
Seasonal fruit
A helper

Do they keep? No. Do you get messy? Yes. Can kids help? Sure, but toppings will go missing. If it’s a hot day, keep them in the fridge before eating. Napkins essential!

Begin this recipe one day ahead. The undecorated cake will keep for three or four days in the fridge, so you can make it well in advance. I don’t recommend freezing. I tried it once and it seemed to abnormally affect the texture.

Use full fat everything. This creamy cheesecake is meant to be indulgent!

*All measurements Australian*

Ingredients:

450g cream cheese, at room temperature
¼ cup (60ml) caster sugar
3 teaspoons (15ml) cornflour
3 eggs
1 teaspoon (5ml) vanilla bean paste (or vanilla extract)
3 teaspoons (15ml) finely grated lemon zest
2 cups (500ml) sour cream
1 cup (250ml) thickened cream
250g good quality white chocolate, melted then cooled to lukewarm. I use Lindt.
Fresh seasonal fruit and fruit puree to serve. Or whatever you like!

Directions:

Preheat the oven to 180ºC (350F). Grease a 20cm (8 inch) loose bottomed cake pan (I’ve also used a 23cm tin with no ill-effects, so this is flexible) and line base and sides with baking paper. Wrap the outside of the tin tightly in a several layers of foil. It’s very important to make sure that it’s well sealed or water will leak into the tin during cooking and spoil the cake.

Whiz cheese and sugar in a mixmaster or with beaters until smooth. With the motor running, add cornflour, then eggs one at a time, making sure they’re well combined into the mix. Add vanilla, zest and creams, and ¼ teaspoon salt, and beat until just mixed. Add chocolate and beat some more until smooth. Pour mixture into the lined tin, then sit the tin on a teatowel in a large roasting dish (the teatowel prevents the tin slipping around). Pour boiling water into the dish until it comes halfway up the sides of the cake tin.

Bake for 45 minutes, then leave the cake in the switched-off oven with the door closed for one hour. Lift tin from roasting dish, remove foil and cool cake completely on a rack (leaving it in its tin). Cover and chill overnight.

Turn out onto a plate or cake stand. Remove baking paper, top with fruit then drizzle with fruit puree. Slice using a hot, dry knife.

I’m so excited to share with you a favorite recipe of mine, Red Velvet Peanut Butter Blossoms. It is a tweaked version of my mom’s tried and true Peanut Butter Blossoms, all festive and sparkly for the holidays.


What you’ll need:

-1/2 cup (1 stick) butter, room temperature
-3/4 cup creamy peanut butter
-1 1/3 cup granulated sugar
-1 egg
-2 tbsp. milk
-2 tsp. vanilla
-1 (or more, I used more to get the color I like) tsp. red food coloring
-3 tbsp. unsweetened cocoa
-1 1/2 cups all purpose flour
-1 tsp. baking soda
-pinch salt
-1/4 cup (or more depending on how big/many cookie balls you make) red sanding sugar
-1 bag Hershey’s Kisses (unwrapped)

Here’s what you do:

-Heat oven to 375 degrees F.
-Beat butter, peanut butter, and sugar until blended, then add egg, milk, vanilla, and red food coloring. Mix until light and fluffy.
-In a separate bowl sift together cocoa, flour, baking soda and salt, then slowly combine with sugar mixture until blended.
-shape dough into 1 inch balls, roll in sanding sugar, and set on parchment lined baking sheet about two inches apart.
-bake for 8-10 minutes
-remove from oven and immediately press an unwrapped Kiss into the center of each cookie.
-allow cookie to cool at room temperature.

Everyone who knows me, knows I love chocolate. And chocolate cookies? Oh, baby! I bake multiple varieties of cookies each Christmas, but these are at the top of everyone in my family’s favorites. I usually end up making a second batch to send with my kids when they head back to their homes. If you try them, let me know how you like them.


Ingredients:

½ C vegetable oil
4 oz unsweetened chocolate melted
2 C sugar
4 eggs
2 t vanilla
2 C flour
2 t baking powder (NOT soda!)
½ t salt
Confectioners’ sugar

Directions:

Mix oil, chocolate, and sugar. Blend well. Add in one egg at a time until well mixed. Add vanilla. Measure flour and combine with salt and baking powder. Add to the oil mixture and combine thoroughly. Chill several hours or overnight. Drop tsp of dough into confectioners’ sugar. Roll to coat and shape into a ball. Place on lined cookie sheet. Bake at 10-12 mins in 350-degree oven. Enjoy!!

Candy Cane Cookies? The perfect minty sweet holiday treat from Tule author, Kelsey McKnight.

My contribution for the cookie party are my candy cane sugar cookies! They’re simple, easy to adjust to other tastes, and always a hit at parties. So if you need a last minute cookie, these will look like you were in the kitchen all day without you actually having to stick by the oven.


Ingredients:

2 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cream of tartar
1 1/2 cups granulated sugar
1 cup unsalted butter, softened
1 large egg
1 large egg yolk
1 tsp vanilla extract
2 cups of chocolate of your choice
3/4 crushed candy canes

Directions:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, whisk together flour, baking soda, salt, and cream of tartar.
  3. In another bowl, blend sugar and butter until combined. Mix in egg, then egg yolk, vanilla, and peppermint extract.
  4. Slowly mix in your dry ingredients until fully combined.
  5. Shape dough into small balls and put on to parchment paper lined baking trays.
  6. Bake for 10/12 minutes.
  7. allow them to cool while you crush your candy canes and slowly melt your chocolate until liquid.
  8. Dip your cookies into the melted chocolate of your choice, lay on fresh parchment paper, then sprinkle with your crushed candy canes.

Jake and Bella, Dessert First’s golden retrievers and resident greeters, have been busy stealing hearts—and sneaking a bite or two of gingerbread when no one’s looking. Recently, they “helped” me solve a mystery of disappearing pastries by following the trail of crumbs to the culprit: a mischievous seagull!

Jake’s seasonal tip: Always keep a spare scarf handy. Not only is it perfect for brisk walks, but it’s also great for wiping off muddy paw prints!

Bella, not to be outdone, has her own pro tip: If you accidentally drop a dessert, don’t worry—your furry sous chefs will happily take care of it.
